Achari Teendy

Achari Teendy is a spicy recipe for Vegeterian surely but it is also liked by Non Veg.Apple Gourd is a vegetable used commonly in whole Asia especially in India & Pakistan people love to eat it.Different regions have their different recipes and taste regarding apple gourd/Teendy.In some regions it is served with Chapati .In some parts it is served with Rice.But one thing is common in all is that it is eaten with love.

Ingredients

Apple Gourd/Teendy 1/2 kg
Water to boil
Salt as per taste
Oil 2 tbsp
Cumin Seeds 1 tbsp
Mustard Seeds 1 tbsp
Black Pepper 1 tbsp
Salt 1 tbsp
Paprika powder 1 tbsp
Onion Paste 1 cup
Turmeric Powder 1 tsp
Tomato Paste 1 cup
Coriander & Green Chillies to garnish

Procedure:

In a big pan take excess water and 1/4 kg Apple gourd/Teendy with a pinch of salt.When apple gourd become soft separate these from the water.Don’t throw out this water.It’ll be used later in gravy.

Heat oil in a pan.Add 1 tbsp cumin seeds in ,1 tbsp mustard seeds,1 tbsp black pepper and roast for 2-4 minutes.Then add 1 tbsp salt,1tbsp paprika powder and again roast on medium flame.Make onion paste with /4 kg onion and 1 cup of water.Add this paste to the pan.Let it cook on medium flame until the raw smell of onion vanishes.Then add 1 tsp turmeric powder in it.Along with it add tomato puree in it.Let it cook until it is converted into a thick paste.

After that add Boiled apple gourd/teendy in it and mix with gentle hand.Then add the leftover water in it.Cover the lid and cook it on low flame for 5-10 minutes.You can sprinkle fenugreek leaves for better smell.Transfer it in serving dish.Serve hot with Chappati/Naan.For a detailed complete recipe click here.Grabb more tasty & tried recipe here.
